Trying a New Dish-Bucket List

Just a few weeks away from celebrating my 32nd birthday and working at getting things crossed off my bucket list for the year. I am realizing that I won't cross everything off; but I will have completed half of the list. And one of those things will be…

8. Try a new dish instead of ordering the same old thing when I go out to eat.

Yes, I am THATperson who knows exactly what I will be ordering before I go into a restaurant. Don't believe me?? Here is a short list: Johnny Carino's-tortelloni, Olive Garden-cheese ravioli with a meat sauce, Red Robin-clucks and fries, Arby's-a small number one combo, Subway-italian bmt on honey oat, with; lettuce, onion, green pepper, banana pepper, spinach, pickles and mayo. I am definitely a creature of habit!

I actually was able to cross this one off my bucket list a few months ago when we went to Red Robin for my dad's birthday. I ordered the, Whiskey River BBQ Chicken sandwich


And yes, I made sure that it wasn't actually made with whiskey! It is just the name of the sauce. I really think our waiter thought I was crazy as I was explaining to him that I am pregnant, I don't drink and I am not convinced that all the alcohol, etc. that people use to cook with actually cooks out.

Was I pleased with my choice? Well, I am pleased that I actually went against my "creature of habit" routine and branched out; but I don't think it was wise while pregnant! You just never know how things are going to set with you and I did enjoy the sandwich at first; but I couldn't finish the last few bites because it suddenly tasted nasty. I really think that the last few bites lacked BBQ sauce and the combination of chicken, lettuce and onion rings was dry and therefore, a little much for me to handle.

Will I order this item again? Probably. But more often than not I will just stick with my creature of habit choice and get the Clucks and Fries!

Book Reviews 8-9

So, I have just a few more weeks before my birthday and 3 more books to read before then! Do you think I can do it? I hope so!

Book 8-Elizabeth Smart, My Story


I started reading this book early one morning after Joseph had went to work and I finished it before bed that same day. So, that should tell you right there that I thought it was good reading and yet easy reading. The book didn't go SO deep that you felt like you had to stop and reread to make sure of what you really read or if you were understanding correctly. The writers painted a transparent picture of the control a person takes when they steal something precious from us. Some of the precious "things" that were stolen from Elizabeth don't need words and I appreciated how she was not graphic about what he (the man who kidnapped her) did to her. She kept the things that needed to be private-just that private. I also appreciated how she emphasized we all deal differently-its easy to say, "I would have..." but you never know until you have actually "been there". I believe that applies to all trials that we face. One of the things that stuck out to me after she had returned home is the "pep talk" her mom gave to her and the statement, "We often choose to let people steal our happiness..." What a simple and yet true statement that I myself, who has not been kidnapped needs to remember. I would definitely recommend this book for reading.

Book 9-Choosing to See


I admit I did not finish this book in one day; but over a period of several days. I starterd reading this book and one of the first things that grabbed my attention was this statement, "I believe God can handle my heart, my questions, and my anger." The reason this grabbed my attention so quick was that often Christians, myself included tend to sometimes even sugarcoat our feelings to God-yet He already knows what is going on-He sees our heart. From that point on I knew I was going to be reading some transparent reading. I appreciate transparency in writing. Mary Beth was very open about the struggles that she faced in the midst of the death of one of her children and the circumstances around it-well, are just wow. I don't want to give details away in case you want to read it. I want to share a couple of quotes I highlighted in the book:

..I've held on to certain expectations about life. But, Jesus has always loved me enough to show me that even when I push my own ideas and expectations, He is there to guide me back to green pastures."

"I have found that even during those times when the path is darkest, He leaves little bits of evidence all along the way-bread crumbs of grace-that can give me what I need to take the next step. But I can only find them if I choose to SEE."

How often do we as Christians talk about our expectations and try to make them out to be what God wants for our lives? Something to think about! Overall, I really appreciated this book and enjoyed it. I do wish that instead of taking excerpts from her blog for the final chapters that she would have just kept with how she had written the previous chapters. But, it wasn't enough to sway me not to finish reading it. I would read it again.

And, with all that being said, I better get reading!

Book Reviews 6-7

Time is slowly running out for me to cross things off my bucket list. I haven't kept up with it like I wanted to and things I don't get accomplished will automatically shift to next years bucket list. However, I am crossing off books from the list and have a few reviews to share with you today. In advance I apologize for no direct links or pictures of the book covers-our keypad is not working correctly and I really don't want to deal with the hassle of it all today.

Book 6: The Upside Down Marriage by, Jim Keller

"One of our biggest challenges in marriage is to communicate through conflict in a productive manner..."

"It's interest to me that what we most want from others is sometimes so easy not to give in return."

"You are always on a slippery slope if you begin to compare your faults to the faults of your own spouse. Own what you need to own and stop the comparison game."

...if the marriage is suffering, parenting will also suffer or at best be extremely challenging."

"Having children is one of the biggest privileges we are afforded by God, but it is a total marriage makeover. Those beautiful babies are heavenly intruders, demanding of both parents' time and sacrifice.

To be honest, I don't know why I chose to read this book; but I did. It was a free book on my Kindle and I just like to read non-fiction books that just might have some helpful tips. I also realize that when a book doesn't necessarily line up with what I believe i need to be careful with what I take from it and while this book has many good points, I do NOT recommend it.

Book 7: The 7-Day Prayer Warrior Experience by, Stormie Omartian

"The Bible would not have told us to take up the whole armor of God in order to withstand evil if evil could have been withstood without doing that."

"Some people think that because Jesus accomplished everything on the cross, we don't have to do anything at all. But if that's true, why did Jesus teach us to pray..."

...we must choose to live God's way. We cannot be protected if we deliberately walk outside the ways and will of God."

Our obedience to God is evidence that we are in alignment with His will. The most important thing is not to get what we want in prayer, but to accomplish what God wants."

In the past I have read other books by Stormie Omartian, one of them being "The Power of a Praying Wife which I thought was excellent! So, I thought a short 7 day Bible reading supplement would be great. The title says 7 days, however, the closing chapter should have been day 8 because it was just as long as the other chapters. I know its petty; but its in my nature I guess to be annoyed with that long 'closing' chapter. A good book; but I am on the fence as to whether or not I would recommend it!

Bucket List-Book Review #5

I am still alive-I think this is the longest I've ever went without blogging! And to welcome me back I am doing what may be considered a boring post as its another book to cross off my 12 books to read from my bucket list!

I just finished, The 5 Love Languages by Gary Chapman!



As I have stated before just because I am doing a book review does not mean I am endorsing the book. I am simply informing you about what I liked and of some interesting thoughts from the book:

...the divorce rate for second marriages in at least 60 percent, and rises when children are involved.

Mark Twain once said, "I can live for two months on a good compliment."

...verbal compliments are far greater greater motivators than nagging words.

The object of love is not getting something you want but doing something for the well-being of the one you love. It is a fact, however, that when we receive affirming words we are far more likely to be motivated to reciprocate and do something our spouse desires.

Encouragement requires empathy and seeing the world from your spouse's perspective. We must first learn what is important to our spouse.

"...I don't know if I can ever forgive you." Those are not words of love but of bitterness and resentment and revenge.

The book offered real life scenarios that were easy to relate to. Sometimes it could look extreme to the situation; but to some its their reality and it was a good reminder that I DON'T want the extreme of marriage issues! We all have areas in our marriage that need to be worked on and the most important person to involve in our marriages is GOD!

Bucket List-Book Review #4

Well, another book to check off the list and 8 more still to read!

Not a Sparrow Falls, by Linda Nichols



I enjoy fiction; but tend to be picky about it as time goes on. I have read Karen Kingsbury and enjoyed her books; but have grown tired of them. Lori Wick is another favorite of mine, I especially enjoyed Pretense and Sophie's Heart. It seems to me that Karen Kingsbury and Lori Wick have the same tendencies in writing and I wanted to try a "different" style; but was hesitant-know what I mean? Well, I was pleasantly surprised with this selection, I was able to download it for free on my Kindle Fire!
I enjoyed this book from start to finish! The author did a wonderful job painting each scene and each character jumped out of the pages into "real life". I was captivated by real life struggles and the love and redemption that God offers! I would definitely recommend this book and would like to read more of her work!

Bucket List-Book Review

Well, here's to checking off another book from my bucket list, goal 4-Read 12 books I've never read before! And with this book under my belt I have now read 3!

I read, Beyond Ordinary···When a Good Marriage Just isn't Good Enough by, Justin and Trisha Davis.



What I appreciated is how honest and transparent the couple was in documenting and sharing their marriage struggles. Most people in general are not willing to be transparent and then to be transparent on paper and publish it?! That rarely happens because, "what will people think?!"

I found myself relating to Trisha and that made me want to keep reading even more! There were a lot of good points; but does not use the King James Bible I just don't feel like I can 100% endorse it. I also was not fond of the final chapter and found myself briefly skimming it.

Points I took from the book...just a few:

·It is a dangerous prayer to pray-God change me. You know why it's dangerous? Because this is a prayer God will always answer. God longs to transform you. As much as you want to change your spouse, as much as you try to modify your behavior, God wants to change your heart. This prayer is where lasting change starts.

·Marriage is physical and emotional, but more than anything else, marriage is spiritual.

·None of us has the capacity to change a human heart. We think that by trying to change our spouse's behavior we are changing their hearts, but that isn't true. By trying to change our spouse's behavior we are actually damaging their hearts.

·Oneness in marriage is possible. It isn't easy, but it is possible. And it only comes as each spouse individually pursues God.

·Less than 8% of Christian couples say that they pRay together on a regular basis.

·Distorting truth and compromising truth often seems innocent and harmless, but it always comes with a price.

·We fear the consequences of confession because we have yet to realize the consequences of concealment.

·If God is powerful enough to do so many miracles, it seems reasonable to conclude that He will also be good with directions.

Bucket List-7 Brides for 7 Brothers

It has been a while since I have been able to cross something off my bucket list!

10 Things I Want to Accomplish Before I'm 32:

1. One week of new recipes.
2. Do a random act of kindness for a stranger.
3. Reach $1500 in 1 month of Scentsy sales.
4. Read 12 books I've never read before. (I have read 2 so far)
5. Get something I've written published.
6. Do my family tree.
7. Eat s'mores with Klayton.
8. Try a new dish instead of ordering the same old thing when I go out to eat.
9. Cut out Red40 from my diet and the diet of my family.
10. Watch 7 Brides for 7 Brothers.

A couple weeks ago, Joseph was gone for the evening and I decided it was the perfect time to watch 7 Brides for 7 Brothers! I do like musicals and discovered that Klayton enjoyed this particular musical as every time there was singing he was dancing! In the end I found myself enjoying the movie as well! Good, clean movie watching right there folks!

Red 40

On my Bucket List for this year I shared I wanted to cut out Red40 from our diet. I thought I would share why and give a progress report.
I am by no means a health nut; but I try to be aware of what is going into our mouths and it seems we eat more junk than we should. I figure the small steps I take add up in my overall health as I realize there is always room for improvement.
Red40 is a dye often put into our foods to help them "look better". Yet if we were to use it outdoors it could be considered a pesticide! It's not a necessary ingredient in the foods we eat. This dye also has a wealth of side effects: infertility, hyperness and migraines just to name a few. In fact most kids who have been labeled with ADHD simply need to eliminate red40 from their diets and most research has shown that after this elimination that medication is no longer necessary.
I am learning that removing Red40 from our diet isn't a huge deal...yes it takes thought and a little work. But, we already eat a lot foods that don't contain the dye. The work comes in when I need to come up with substitutes. For example Klayton loves strawberry milk, one of the ingredients is Red40 and to remedy this situation I now spend an extra 10-15 minutes once a week making our own strawberry syrup. I am also learning that just because a food item is not red that it doesn't nix the idea that there is no red40. Most vanilla ice cream and even some crescent rolls contain Red40. Our main changes thus far are as follows: If we want candy we stick to chocolate. Klayton enjoys fruit snacks so we only buy the Motts brand. We also switched to Tom's toothpaste. Wow, those changes are very overwhelming right?! Just kidding. It's not been a sacrifice and it hasn't been hard. But, I do admit that we have had slip ups...like enjoying that clearance bag of jelly beans. Sigh. But, this journey is about progress!

Book 2 of 12

Bucket List 2013-Read 12 books I have never read before.

31 Days of Forgiveness: through the eyes of grace. Written by, Tracie Stier-Johnson

This book is meant as a daily devotion and it has tons of scripture. But, since it doesn't use the King James Bible I didn't use it as a devotional, I just read it as if it were a regular book.

It did have some good truths; but I'm iffy on giving a good recommendation. However, here are a few quotes that I really liked.

Those who have served God for a long time have been kept from gross sins have a great deal to be humbly thankful for, but nothing to proudly boast about.
Matthew Henry

If sin continually remains in our lives and we don't repent and turn from that sin, God may require His divine discipline. If He didn't, He wouldn't be a loving and concerned Father.

Forgiveness does not mean excusing.

Just because we've decided to forgive someone doesn't mean we allow the behavior to continue. In fact, it's very important we do all we can to help the person stop his/her destructive behavior.

Are you sorry you got caught? Or are you sorry for what you've done?

Ultimately, forgiveness is a choice. A choice to live bound. Or a choice to live free.

Book 1 of 12

Bucket List 2013-Read 12 books I've never read before.

Honestly, I've read 3 other books besides this one this week. But, wanted my 12 books for my bucket list to be meaningful! I must admit, this was a good choice! I had downloaded this book for free on my Kindle Fire a few weeks back; but its a book that I would be willing to buy if I had to!

A Faithfull Marriage by Paul Chappell

A few favorite excerpts:

"When He is absent from our hearts, the best we can hope for is the ability to simply 'get by'. "

"Too many marriages today suffer from 'conditionitis'-we conduct our relationships as though it is a contract negotiation rather than a loving commitment. We place conditions upon our love. Honestly, I highlighted a ton of good points. I liked this book because it was short, yet to the point full of strength and practical! Also, I don't like it when authors spend a lot of time quoting others and Paul Chappell quoted the Bible more than anyone else-it was evident his basis was from the Bible!

10 on Tuesday

1. This month I am going to strive to post at least 2 times a week on my blog.
2. Last night we got a hotel with a whirlpool in it and I think Klayton thought we got that feature just for him!
3. I should mention that we are in the process of moving...like to another state TODAY. I will post details later.
4. I should have taken pictures when we loaded the moving truck yesterday. Klayton loved the truck and walking the ramp...he even loaded a couple of boxes! I wonder if when we unload anyone will notice the empty box that has been packed?!
5. I really need to get working on my reading list of 12 books to read. Any book suggestions?
6. Last week we had to renew our car tags. As I walked in I saw my notice said they expired on the 31st of January. I went in and told the clerk that I must not understand the system because my current sticker said 2...so I thought it didn't expire until the end of February. She apologized for their error and I was very understanding about their error and was thankful that I wasn't charged a penalty. But, then I felt foolish as I walked to my van and noticed our current tag did indeed bare the number 1! It was not their error; but mine...oy.
7. Has anyone ever made a slip cover for a couch or chair from a sheet? If so, please share!
8. I'm looking forward to enjoying the 60s at the close if week...winter can leave in my opinion.
9. Since starting this post I drove across Nebraska into Kansas and our moving truck is unloaded!
10. Okay, seriously coming up with 10 random thoughts shouldn't have been that difficult; but it was.

3 Cheese Chicken Alfredo

Tonight concluded one week if new recipes! It was more of a feat than I anticipated it would be! Ha! Apparently, the cooking rut I was in was very deep!

I followed the recipe below exactly as written; but next time I will do some tweaking. I didn't like the taste of the ricotta, next I will do 1/2 cottage cheese and 1/2 ricotta to avoid that dry taste. I also will add more seasoning, like onion and basil? Maybe some sage and thyme as well. Also, as I made the recipe I realized I was cooking a lot so I divided it up into two 9x9 dishes and will freeze one for later.


Ingredient Checklist:

1 (16-ounce) package penne or elbow macaroni
2 (10-ounce) containers refrigerated Alfredo sauce
1 (8-ounce) container sour cream
1 (15-ounce) container ricotta cheese
2 garlic clove, minced
3 cups cooked chicken, chopped
2 large eggs, lightly beaten
1/4 cup grated Parmesan cheese
1/4 cup chopped fresh parsley
2 cups mozzarella cheese

Directions:

•Prepare pasta according to package directions; drain and return to pot.
•Stir together all ingredients except mozzarella cheese.
•Spread mixture into a lightly greased 13- x 9-inch baking dish. •Sprinkle evenly with mozzarella cheese.
•Bake at 350° covered for 30 minutes or until bubbly.

Olive Garden Copycat Breadsticks

Today was just not my day. And Fridays are always homemade pizza night if we're home. But, I needed to keep with trying a new recipe as after today I only have one day to complete!
Since I was not about to forego a Friday might tradition of homemade pizza I decided to attempt, Olive Garden copycat breadsticks! It was a success! I don't think they tasted JUST like Olive Garden; but they were still a win that will be used in the future!


Copycat Olive Garden Breadsticks:
(Tweaked by me for the bread machine)

Ingredient Checklist:
•1 cup and 2 tbs warm water
•2 tbs sugar
•1 3/4 salt
•3 tbs oil
•3 1/4 c flour
•1 1/4 tsp bread machine yeast

Topping Checklist:
•2 tbs butter/margarine
•1/2 tsp salt
•1/4 tsp garlic powder

Directions:
•Combine 1st set of ingredients, in order in the bread machine.
•Transfer dough to a large buttered mixing bowl, cover with plastic wrap and allow to rest in a warm place free from draft until double, about 1 1/2 hours.
•Punch risen dough down, divide into 12 equal portions (2 ounces each by weight), keep them covered with plastic wrap as you work. Roll each piece into a 9 inch rope on a lightly floured surface, transfer to buttered cookie sheets or non stick baking sheets. Cover and let rise 1 hour.
•Preheat oven to 400.
•Bake 11-13 minutes.
•Mix the salt and garlic powder in small bowl.
•When breadsticks are done, rub butter on top and sprinkle the salt/garlic powder mixture.

Baked Meatball Subs

Since its Valentines Day, I wanted to make a special dinner. But, we went out for lunch at Johnny Carinos and came away stuffed and with a free dessert boxed up for later. So...the fancy dinner went down the drain and simplicity was better!

Can you believe I never made meatballs until today? Thus, i have never made meatball subs either!This recipe was very filling-I served 2 per person and neither of us needed the 2nd.


Baked Meatball Subs:

Ingredient Checklist:
•1 lb ground turkey/beef
•1 c. Italian seasoned bread crumbs
•1/2 c. chopped onion
•milk
•1 pkg. Italian blend shredded cheese
•1 pkg. steak buns
•1 jar pasta sauce

Directions:
•Preheat oven to 400.
•Combine meat, bread crumbs, onion in bowl...fold in mixture using milk as and when needed.
•Roll meat into balls the size of walnuts and brown in skillet with sauce.
•Place meatballs, probably 3 and a spoonful of sauce in each sub.
•Top subs with cheese.
•Bake until cheese is melted and bubbly.

Crescent Burgers


Ingredient Checklist:

*1 pound of ground beef
*Worcestershire sauce
*1 Egg
*1/3 packet of dry onion soup mix
*1/2 tsp of black pepper
*2/3 cup of cheddar cheese
*1 roll of crescents


Directions:

*Preheat oven to 375
*Brown meat. Drain excess fat.
*In a medium size bowl mix – 1/2 cup of cheese, onion soup mix, couple drops of Worcestershire sauce, pepper; meat.
*Unroll the crescents. Place a rounded tablespoon of the meat mixture towards the larger end of the crescent dough
Roll – I personally made them into little pockets.
*Place crescents onto a cookie sheet lined with parchment paper.
*Brush the tops of the dough with an egg wash ( simply break and egg in a bowl and whisk egg until well blended and 1 tablespoon of water to the mix).
*Sprinkle the remaining cheese on top of the egg wash and bake for 10 – 15 minutes.

This recipe was yummy and Klayton approved-he ate two!
I tweaked the recipe a little by browning the meat with the onion soup mix! I also discovered my eggs were expired so I used oil to brush the tops with!


Philly Cheesesteak Sloppy Joes

Day 3 is in the books! Tonight's recipe was fun for me, I really enjoyed the "whisking" while making the cheese sauce! The food was delicious and has been considered a keeper!

Philly Cheesesteak Sloppy Joes
Adapted from Rachael Ray

Ingredient Checklist:
1 tablespoon olive oil
1 pound ground beef
1 softball-sized onion, chopped
1 green pepper, chopped
2 tablespoons steak sauce, such as A-1
1 cup beef stock (I actually used beef broth and it worked great!)
Salt and ground black pepper
4 dinner rolls (I did 6 small rolls)
1 tablespoon butter
1 tablespoon flour
1 cup milk
1 cup provolone, shredded

Directions:
In large skillet over medium-high heat add the oil and then brown the ground beef, about 5-6 minutes. Add the onion and green pepper and cook another 3-4 minutes, until the vegetables start to get tender. Stir in the steak sauce and beef stock, season with salt and pepper, bring up to a bubble and cook about 2 minutes.

Split open rolls and remove most of the soft insides, leaving a bed to hold the meat mixture. Toast the rolls and set aside.

While the meat is cooking, melt the butter in a medium-size pot over medium-high heat. Stir in the flour and cook about 1 minute. Whisk in milk, bring up to a bubble and let thicken, about 2 minutes. Turn off heat and stir in the cheese.

To serve, place a scoopful of the meat mixture onto the bottom of the rolls, then top with the cheese sauce and replace the top of the roll.

Crockpot Chicken and Dumplings

I can successfully check off day 2 of a week of new recipes! I realize some may be thinking, "chicken and dumplings, new?" It's true, until today I had never made chicken and dumplings! Of course I've ate it; but its been years since I've even had it! Thankfully, this recipe was a success! I think my husband going back for 3rds is what classifies it as success!

Chicken and Dumplings

Ingredient Checklist:
•4-6 boneless skinless chicken breasts
•2 tablespoons butter
•2 small cans cream of chicken soup
•1 small can chicken broth
•1 onion diced (I used a 1/4 of one)
•1 tablespoon dried parsley
•4 grands flaky refrigerator biscuits (I used five)


Directions:
Put the chicken, butter, cream of chicken, chicken broth, parsley and onions in the crock pot and cook on high for four to six hours. Mine only needed five, and probably didn’t even need that much.
As the chicken cooks and gets tender, break it up with a spoon or fork, whatever.
Get your biscuits and cut them into nine pieces. I kind of rolled them into balls to ensure they stayed whole but it’s not necessary. Stir into chicken mixture and cook for another hour.

Walking Taco Casserole

Day 1 of a Week of New Recipes:

This recipe is famous for birthday parties and camp as its easy to serve in a bag and go! But, I thought it would be weird to eat our dinner out of a bag! I found this idea to do it as a casserole on Pinterest! I know of all the places? It was SUPER quick and easy to make!


Walking Taco Casserole:

Ingredient Checklist:
•Fritos
•1 lb ground beef or turkey
•1 pkg taco seasoning
•1 pkg taco blend shredded cheese

Directions:
•Preheat oven to 350
•Brown ground beef/turkey (I used turkey)
•Add taco seasoning to meat, according to package directions.
•Layer in 9x9 baking dish: Fritos, meat, cheese...repeat.
•Finish layers with meat on top and bake for 7-10 minutes.
•Top with another layer of cheese and bake until top is melted.

Bucket List 2013

I turned 31 last Saturday. Wow! I'm beginning to realize that I am definitely not getting any younger! I had the idea to make a bucket list of sorts, things to accomplish this year. Initially, I was going to list 31 things; but the list below was enough of a struggle...

10 Things I Want to Accomplish Before I'm 32:

1. 1 week of new dinner recipes.
2. Do a random act of kindness for a stranger.
3. Reach $1500 in 1 month of Scentsy sales.
4. Read 12 books I've never read before.
5. Get something I've written published.
6. Do my family tree.
7. Eat s'mores with Klayton.
8. Try a new dish instead of ordering the same old thing when I go out to eat.
9. Cut out Red40 from my diet and the diet of my family.
10. Watch 7 Brides for 7 Brothers.

Some of the above may sound odd; but I don't think I'm the only one who cooks the same things all the time or always orders the same thing at a restaurant?
The movie thing? Well, I don't know how many times I've been asked, "don't you just love 7 Brides for 7 Brothers?"
